Orange Dream Cake

I made this cake this afternoon. I had intended to make it Christmas Day and then decided we didn't need a dessert. I had a piece of it a little bit is very good...I didn't think to take a picture.

Here's the recipe:
1 package orange cake mix (Duncan Hines)
1 (4 serving size) package orange flavored gelatin
2 eggs
1/2 cup vegetable oil
1 1/2 cup water
4 oz cream cheese, softened
3/4 cup orange juice
1 (4 serving size) package instant vanilla pudding
1 T sugar
1 (8 oz) can crushed pineapple, drained
1 (8 oz) container frozen whipped topping, thawed (Cool Whip)

Preheat oven to 350 degrees. Coat a 9x13 baking dish with nonstick cooking spray (I used Baker's Joy that is a combination of flour & oil - for baking)

In a large bowl, beat together cake mix, gelatin mix, eggs, oil and water until well blended. Pour into baking dish.

Bake about 30 minutes, or until a toothpick inserted in the center comes out clean. Remove from oven and let cool.

Meanwhile, in a medium bowl, make frosting by beating cream cheese and orange juice. Add pudding mix and sugar; mix well.

Stir in pineapple until well combined then beat in whipped topping. (I folded it in rather than beat it in). Frost the cooled cake, cover loosely and chill at least one hour before serving. Store leftovers in refrigerator.

To make it look pretty, decorate with some canned mandarin orange slices that have been drained well.

I thought it would be real orangey tasting, yet it wasn't. This recipe is similar to one called "Pig Lickin' Cake". I'll have to find that recipe and post it. If I can remember, I'll take a picture of a slice of the cake tomorrow and post it.
